Bean Dip

What you’ll need:

  • 1 can black eyed peas (or one package dried, soaked overnight)
  • 1 can black beans (or one package dried, soaked overnight)
  • 1 can shoepeg corn
  • 1 cup finely chopped onion
  • 2 cloves crushed garlic
  • 1 cup finely chopped parsley
  • 2 Tbsp basil
  • 1/2 Tbs black pepper
  • A few drops Tabasco –add more to taste
  • 1/2 Tbsp dry mustard

Marinade:

  • 2/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp sea salt

How you make it:

  1. Drain beans and corn and put in bowl.
  2. Add all other ingredients.
  3. Whisk marinade then add to other ingredients.
  4. Refrigerate at least 24 hours. Serve with Sammi’s grain free chips.
