Makes 5 biscuits/muffin


½ cup ground flax
1 tsp. baking powder
¼ tsp. cinnamon
2 tbsp. coconut oil (melted)
2 eggs
Stevia to taste
½ cup gluten free mix

Gluten Free Mix
1 ½ cup sorghum flour
1 ½ cup potato starch
1 cup tapioca starch

Preheat oven to 350 degrees
Blend dry ingredients together.
Add coconut oil and eggs. Mix with a fork. (if mixture seems to moist add more gluten free mix)
Drop mounds onto a baking pan.
Bake for 5 min.
You could add fruit, nuts, carob chips etc. to add an extra flavor and texture.
