Carrot-Beet Salad

Carrot-Beet Salad- Standard Process

¼ cup lemon juice
2 tablespoons olive oil
2 tablespoons raw honey
1 teaspoon cumin
½ teaspoon cinnamon
¼ teaspoon cayenne (optional)
Celtic Sea Salt, to taste
3 cups shredded beets
3 cups shredded carrots
½ cup fresh parsley, chopped

Mix all ingredients except beets, carrots, and parsley in a bowl. Check seasonings. Add beets, carrots, and parsley. Toss to combine. Let marinate 2 hours, if desired.
