Green Eggs

4 eggs
4 large kale leaves (do not trim or remove stems)
Pinch of salt
Oil of your choice for frying

Place eggs, kale leaves and salt in a food processor. Blend on high until smooth. Heat oil in pan over medium heat. Pour egg mixture in pan. Allow eggs to cook a bit, and then scramble. Cook eggs to your preferred doneness.
