Italian Chicken Bake

– 3 boneless/skinless organic chicken breasts cut into 1″ cubes
– 2 lbs red potatoes cut into slices app 1/4-1/2″ thick
– 1-2 large organic zucchinis
– 3 lg seeded organic tomatoes, chopped
– 1 cup organic chicken broth (or chicken bone broth)
– 1 tsp garlic powder
– 1 tsp onion powder
– salt/pepper

Preheat oven to 425. Mix all ingredients in a 13×9 casserole pan. Add
stock. Salt/pepper to taste. Cover with foil. Bake app 30 min till
potatoes are tender.
