No Bake Almond Power Bar Fudge
This healthy, easy to make, no-bake
is made from healthy whole foods.
Cut it into squares, bars or fun,
kid friendly shapes.
It is a great snack for the entire family!
What you’ll need…
1 ½ cups almond flour/meal *
½ cup shredded unsweetened coconut
½ cup almond butter (you can make your own by using the recipe below)
½ cup raw honey*
1 – 2 Tablespoons Cacao powder
What to do…
1 Grease a baking dish with coconut oil. (Size of the baking dish can vary based on how thick you want your fudge)
2 Combine the almond flour, shredded coconut and cacao in a mixing bowl and set it aside.
3 On the stovetop melt the nut butter with the raw honey until it is combined. Pour this mixture into the dry ingredients and mix until fully combined. It will be very thick.
4 Transfer to the greased baking dish and press firmly. Refrigerate for at least 30 minutes before serving.
* You may need to add more honey or almond flour depending on what consistency you want your fudge and what type of almond flour/meal and nut butter you use. If the batter is too thin, add almond flour- 2 table spoons at a time. If the batter is crumbly add more honey – 1 tablespoon at a time.
Quick Almond Butter – Warm 1 tsp coconut oil, almond or walnut oil. Add 1¾ cup ground dry roasted nuts, stir. Add ¼ tsp Celtic sea salt. You can choose to add honey to taste. Makes 1 cup. (Don’t have a food processor, try a coffee grinder to grind your nuts.)
