Laden with fiber and folate, these parsnip sticks are a simple and healthy alternative to French fries.
- 4 peeled parsnips
- 3-4 tbsp coconut oil
- Salt and pepper, to taste
Preheat the oven to 375°F.
Slice parsnip like you would a carrot and trim the ends. Place on a baking sheet. Drizzle with coconut oil.
Bake for about 30 minutes, tossing once at the halfway mark. Add salt and pepper for flavor.
