Bean Preparation & Bean Dishes

Serves: 4 to 6 servings

What you'll need:

  • 1 pound bacon, (chopped)
  • 1/4 cup butter or ghee
  • 2 lbs boneless, skinless chicken thighs
  • 4 cloves garlic, (minced)
  • 1 small onion, (chopped)
  • 24 oz frozen green beans, (thawed)
  • 1 cup grated parmesan cheese
  • 1 cup full-fat coconut milk

What you'll need:

  • 1 can black eyed peas (or one package dried, soaked overnight)
  • 1 can black beans (or one package dried, soaked overnight)
  • 1 can shoepeg corn
  • 1 cup finely chopped onion
  • 2 cloves crushed garlic
  • 1 cup finely chopped parsley
  • 2 Tbsp basil
  • 1/2 Tbs black pepper
  • A few drops Tabasco --add more to taste
  • 1/2 Tbsp dry mustard

  • 2 cups beans Warm filtered water
  • ½ teaspoon baking soda
  • 4 cloves garlic Sea salt and pepper

Cover beans with warm water stir in baking soda and leave in warm place for 12-24 hours (larger beans soak longer). Drain, rinse, place in a large pot and add water to cover beans. Bring to a boil and skim off foam. Reduce heat and add garlic. Simmer covered for 4 to 8 hours.

  • 2 red bell peppers seeded and chopped
  • 1 Jalapeno pepper, seeded and minced (if you dare)
  • 10 fresh baby bella mushrooms quartered
  • 6 roma tomatoes diced
  • 1 cup fresh or fresh frozen corn kernals
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 2 (15 ounce) cans black beans drained and rinsed
  • 1 ½ cups chicken bone broth or vegetable stock
  • 1 teaspoon salt
