BLACKBERRY + MANGO LEMON POPPY SEED FRUIT SALAD WITH EARL GREY WHIPPED COCONUT CREAM

Prep time: 10 minutes Serves: 4 – 6 people

Fruit Salad Ingredients:

  • 4 super juicy ripe mangoes
  • 1 cup of blackberries
  • 1/4 teaspoon poppy seeds
  • 1 teaspoon local honey or maple syrup
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon lemon zest + more for garnish

  • 2 heads fresh kale, very finely chopped
  • 2 large carrots
