  • 1 pound crimini mushrooms, cut in half

  • 2 stalks celery
  • 1 head cauliflower, broken into florets

  • 1 teaspoon lemon zest
  • 2 garlic cloves
  • 1 tablespoon fresh thyme
  • 1/3 cup roughly chopped parsley
