Spicy Orange Sweet Potatoes Serves: 6-8

Ingredients:

  • 4 pounds of sweet potatoes
  • ¼ cup freshly squeezed orange juice (from about ½ of a large orange)
  • 1 teaspoon orange zest (from about ½ of a large orange)
  • 1-2 jalapenos, seeds and ribs removed and finely diced (If you prefer more heat, use 2 peppers.)
  • ¼ teaspoon sea salt
  • 2 Tablespoons grass-fed butter or ghee (You can substitute coconut oil if you avoid dairy.)

  • ½ pound bacon (225 grams)
  • 3 large sweet potatoes (about 2 pounds/910 grams), cut into ½-inch (12-mm) cubes
  • 4 garlic cloves, chopped
  • 2 tablespoons coconut oil
