Slow Cooker Meals

What you'll need:

  • 4 Organic Lamb Shanks (Wegmans Food You Feel Good About)
  • 2 Tbsp Olive oil
  • 1 pkg Mirepoix (8oz)
  • 1 Bay leaf
  • 1 C Dry white wine
  • 1 Can kitchen cut Roma Tomatoes with Basil
  • 3 Cans Cannellini beans, drained
  • 1 Lemon, zested and juiced (1-2 Tbsp)
  • 1 C Chicken Stock (BONE BROTH!)
  • 1 tsp Fresh Rosemary, chopped
  • 1 tsp Fresh Thyme, chopped
  • Salt and Pepper

Serves 4

INGREDIENTS:

  • 2-3 lbs of beef roast
  • 2 c chopped carrots
  • 1 small white onion, diced
  • 2-3 tbsp minced garlic
  • 1 tsp sea salt
  • 1/2 tbsp garlic powder
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Pinch of red chili flakes
  • 1 c diced tomatoes and juice
  • 1 c bone broth*
  • 1 tbsp tomato paste

What you'll need:

  • Free range boneless pork shoulder/butt
  • 1 cup chicken bone broth
  • 2 teaspoons minced garlic
  • 1 small onion, sliced thin
  • 1 tablespoon raw honey
  • 1 tablespoon chili powder
  • ¼ teaspoon cumin
  • ¼ teaspoon cinnamon

How you make it:

  1. Combine all ingredients in Crock Pot, mix well until everything is coated.
  2. Cook on low 6-7 hours, or high 4-5 hours until pork shreds easily

A simple farmhouse stew, this recipe features root vegetables, slow­ cooked beef and fresh herbs. This recipe is adapted from Emma Aller's recipe for farmhouse stew. What you’ll need:

  • 1 1/2 pounds beef chuck roast, trimmed of excess fat and sinew (get it here)
  • 1 teaspoon unrefined sea salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon butter
  • 8 ounces English­style (find it here) or Canadian Bacon, chopped
  • 4 medium carrots, scraped and chopped into 1/2­inch thick rounds
  • 4 medium Russet potatoes, peeled and chopped into 1­inch cubes
  • 1 cup pearl onions
  • 1 quart homemade beef stock
  • 1 1/2 cups red wine
  • 1 tablespoon fresh thyme leaves
