Veggie Stir Fry over Cauliflower “Rice”

– 1 head cauliflower (blend in food processor till it resembles rice)
– 1 cup snow peas
– 1 can organic water chestnuts or can use fresh if available- be sure
to peel
– 1-2 cups shredded napa cabbage
– 1 red pepper- cut into strips
– 1 cup chopped broccoli
– 1 cup sliced mushrooms
– 1 small red onion, sliced
– 1/2 cup matchstick carrots
– 1/3 cup Bragg’s Liquid Aminos (soy sauce substitute)
– 1/3 cup organic veggie stock
– app 1/3 cup sesame oil

Rice
In lg skillet, Heat 3 Tbl sesame oil. Saute cauliflower till tender.
Salt/pepper to taste. Set aside.

Stir Fry
In another lg skillet, heat the remainder of oil. Add rest of veggies and
saute till tender. Add Bragg’s and stock, saute app 5 min more.
Salt/Pepper to taste.

On plate, put a generous scoop of cauliflower “rice” and top with another
generous scoop of stir fry and serve. Serves 6
